The Vollrath pan below is the pan I use every time I make eggs. I like this carbon steel pan because the metal is thin, the pan is lightweight, the handle is welded instead of riveted (easier cleaning), and the pan is cheap. It has everything I need to make and do my specialty egg dishes well.
